Bak Kut Teh (SGD $10.90) @ Han Jia Bak Kut Teh Pork Leg. . Established in 1963, this brand serves up an unconventional cloudy broth that sits in the middle of the spectrum, with savoury salty peppery spice garlicky herbal earthy sweet flavour. . The pork ribs are fall-off-the-bone tender and soft, with meaty savoury sweet flavour. The crunchy preserved mustard greens / meigan cai / mei cai carry vegetal sour salty earthy spice flavour, pairing well with the fluffy soft steamed white rice with grainy sweet flavour. . While they could be more generous with the crisp fried dough fritters / you tiao, I liked the soft soy braised hard-boiled egg with eggy sweet flavour, and the spongy soft soy braised tau pok / dried tofu puff with grainy salty sweet herbal flavour. . A star here is their soy braised pork trotter, equal parts lean and fatty, coming easily off the bone. With chewy gelatinous wobbly texture and bold meaty salty herbal sweet savoury fatty flavour, this was incredibly satisfying.

The cloudy soup looked plain at first, but a few sips totally changed that impression. I’m familiar with the peppery, herbal and clear styles of bak kut teh, but this tastes like in a whole different league. There’s the comforting pepper warmth at the base—not too peppery, with light herbal notes (likely from thinly sliced dang gui) that don’t overpower. Truly the kind of “genius makes things look simple”. The soup warmed the throat and chest, and the ribs were so tender they slid off the bone, and the soft bone gives a nice crunch. The meat is thin, but honestly I’d take this over the thick ribs elsewhere that can be hard and get stuck in your teeth. The pig’s ears were equally tender and nicely marinated, with just the right hint of garlic and spices. The chilli was robust with a light garlic note. Was looking for something warm and simple to comfort a gassy stomach—this bak kut teh totally delivered and saved the day. A comforting bowl of BKT & pig's ears for just $9.90. Super value for money 🤝🏼🤝🏼 First visit on a Sunday evening. Fingers crossed the tenderness wasn’t just because it was simmering the whole day near closing time 😂😂
